Chopped Green Salad
INGREDIENTS
- 2 cups chopped romaine
- 2 cups chopped spinach
- 1 cup chopped green bell pepper
- 1 cup chopped cucumber
- 1 cup chopped zucchini
- 1 cup chopped avocado
- Salt and black pepper to taste
- 1/4 cup small capers, drained
PARMESAN DRESSING
- 1/2 cup grated parmesan
- 1 lemon juiced
- 1 tablespoon black pepper
- 1/2 cup mayo
- 2 tablespoons extra virgin olive oil
GET COOKIN'
- In a large mixing bowl, combine chopped greens, vegetables, and capers.
- In a food processor or blender, combine parmesan, lemon juice, pepper, and mayonnaise. Slowly add oil, in a steady stream while processor is running. Reserve dressing in refrigerator until ready for use.
- Add the parmesan dressing to the salad. Toss well and season to taste with salt and pepper.
