Chopped Green Salad


  • 2 cups chopped romaine
  • 2 cups chopped spinach
  • 1 cup chopped green bell pepper
  • 1 cup chopped cucumber
  • 1 cup chopped zucchini
  • 1 cup chopped avocado
  • Salt and black pepper to taste
  • 1/4 cup small capers, drained


  • 1/2 cup grated parmesan
  • 1 lemon juiced
  • 1 tablespoon black pepper
  • 1/2 cup mayo
  • 2 tablespoons extra virgin olive oil


  1. In a large mixing bowl, combine chopped greens, vegetables, and capers.
  2. In a food processor or blender, combine parmesan, lemon juice, pepper, and mayonnaise. Slowly add oil, in a steady stream while processor is running. Reserve dressing in refrigerator until ready for use.
  3. Add the parmesan dressing to the salad. Toss well and season to taste with salt and pepper.
