Spicy Carrot Salad

SERVES 10

INGREDIENTS

  • 6 cups of shredded carrots
  • 1/2 cup raisins
  • 1/2 cup golden raisins
  • 2 1/2 cups orange segments
  • 1 tablespoon honey
  • 1 1/4 teaspoons cumin
  • 1/2 teaspoon smoked paprika, (or regular paprika)
  • 1/8 teaspoon cayenne
  • 1 1/2 cups scallion, sliced thin, green part removed
  • 1 cup cilantro leaves packed
  • 2 lemons, juiced
  • 1/3 cup extra virgin olive oil
  • Salt

GET COOKIN'

  1. In a large mixing bowl combine all ingredients, toss well, and refrigerate, for at least one hour to marry flavors. Add salt to taste.
