Spicy Carrot Salad
SERVES 10
INGREDIENTS
- 6 cups of shredded carrots
- 1/2 cup raisins
- 1/2 cup golden raisins
- 2 1/2 cups orange segments
- 1 tablespoon honey
- 1 1/4 teaspoons cumin
- 1/2 teaspoon smoked paprika, (or regular paprika)
- 1/8 teaspoon cayenne
- 1 1/2 cups scallion, sliced thin, green part removed
- 1 cup cilantro leaves packed
- 2 lemons, juiced
- 1/3 cup extra virgin olive oil
- Salt
GET COOKIN'
- In a large mixing bowl combine all ingredients, toss well, and refrigerate, for at least one hour to marry flavors. Add salt to taste.
