Herb Popsicle


  • 1 cup water
  • 1/2 cup sugar
  • 2/3 cup lemon juice


  1. In a sauce pan over medium heat, dissolve the sugar in the water, stirring occasionally. Remove from heat and let cool slightly.
  2. Stir in the lemon juice and pour into ice pop trays. Place an herb leaf or spring in each tray.
  3. Cover popsicle tray with 2 layers of tinfoil and insert a popsicle into each (to ease the process, pre-cut slits for popsicle sticks using a paring knife). Freeze overnight.
