Simple Grilled Cheese Sandwiches

The grilled cheese sandwich is one of my absolute favorite comfort foods. Some thickly buttered bread and just the right amount of cheese slowly grilled to perfection can make the gloomiest of days a little brighter.

Now I’m not sure if the grilled cheese purists out there will like what I’m about to say, but I think you can add a few choice items to take the bread-and-cheese model to a whole new level. Layer a little bacon or chorizo, tomatoes and onion, or dare I say, add pickles? I love the crunch!

These three takes on grilled cheese are the ideal crowd-pleasers for a party or simply a fun twist on a classic lunchtime favorite. Watch me make them on the show here!


What you’ll need…
Recipes below make 12 sandwiches, 4 of each variety.

All American
8 thick slices of country style sourdough bread
16 American cheese slices
16 slices of bacon, cooked
3 large tomatoes, sliced
2 tablespoons butter, melted

Quarterback
8 thick slices of country style sourdough bread
16 pepper jack cheese slices
1/2 lb cooked chorizo, sliced lengthwise
1 large onion, thinly sliced
2 tablespoons butter, melted

MVP
8 thick slices of country style sourdough bread
16 provolone cheese slices
1/2 lb thinly sliced salami
2 tablespoons butter, melted

Get started…
1.  Set a large skillet or griddle on medium heat.
2.  Place 4 bread slices on working surface; build the sandwich.
3.  Brush butter on one side of remaining 4 slices of bread. Turn sandwiches over and brush with butter.
4.  Cook about 4 minutes per side, until golden brown and cheese is melted.

    Katie! I couldn’t believe the question! Grilled cheese is such a staple in our family, as well as others. But my family has added a secret ingredient: brown sugar (just a tablespoon between two slices of cheese). Actually, my mother added this ingredient when I was a little girl to have something to pack in my school lunch that I would eat (picky eater). Anyway, I carried on the tradition with my family, and my son even introduced it to his friends in college. We meet people all over who are alumni of that college who know and are fans of the famous “brown sugar grilled cheese” sandwiches! My mother is famous!!! If you haven’t tried it, you don’t know what you’re missing! I would love to come to your show and demonstrate this lovely treat!
