Chicken Salad Tea Sandwich

SERVES 10-12

INGREDIENTS

  • 2 cups chicken breast, diced
  • 3/4 cup mayonnaise
  • 1/2 teaspoon curry powder
  • 1 tablespoon mango chutney
  • 1 tablespoon mango chutney
  • 1 teaspoon lemon juice
  • 1/4 cup canned water chestnuts, diced
  • 1/4 cup celery, diced
  • 1/4 cup sliced almonds
  • 1 loaf white bread, thinly sliced
  • Circular cookie cutter (optional)
  • Chives

GET COOKIN'

  1. Combine chicken breast, mayonnaise, curry powder, chutney and lemon juice in a bowl.
  2. Add water chestnuts and celery. Mix thoroughly. Add sliced almonds.
  3. Spread thick layer of salad onto slice of bread. Place another slice of bread on top to close the sandwich. Cut out shapes using a cookie cutter or cut into four squares or triangles with a knife.
  4. Top sandwiches chives.
