Simple Cucumber Salad

Lucky for me and my small patch of veggies in the backyard, cucumbers like it hot! And it’s a good thing because it’s a steady degree of toasty these days…and it shows in how many yummy cukes I’ve been able to pick. Technically a fruit by scientific standards, cucumber plants yield the perfect crunchy and refreshing ingredient for your summer salads without much fuss.

While you can plant cucumbers for growth along the ground, try using a trellis to save space in your garden, give support for the vines and keep your fruit clean.  After you’ve planted, be sure to keep the soil moist and pretty soon you’ll have cucumbers big enough to pick. Once they start, cucumbers grow quickly so check out your plants daily to know when to harvest them.

Mix your homegrown cucumbers with onions and an easy homemade dressing to enjoy this Cucumber Salad. Of course, you can always buy cucumbers from the store…I won’t tell anyone!


Cucumber Salad
What you’ll need…
For Onion Marinade
1 cup sugar
1 cup red wine vinegar
1 cup water
2 large red onions, sliced thin

For salad

3 cucumbers, cut in half, seeds removed
1/4 cup olive oil
2 lemons, juiced
1/2 cup dill, picked
Salt and black pepper

Get started…
1.  Combine sugar, red wine vinegar and water in a bowl and mix to combine. (Do not use a metal bowl, as the vinegar may react with it.)
2.  Add onions and cover with plastic. Marinate overnight. Remove onions from liquid and proceed to making salad.
3.  Slice cucumbers into half moon shapes.
4.  In a large mixing bowl, combine cucumbers, olive oil, lemon juice, fresh dill, marinated red onions. Season to taste with salt and pepper.

    I was watching your show this past Sunday, it was beach themed. you did a cucumber salad, a pound cake with fruit with pudding and whipped cream and a etched glass candle holder with sand and shells. You also did a poached salmon with dill recipe I likes. I can not find this recipe, and I’d like to try it. Can you help?
