Frozen Vegetable Sandwich

INGREDIENTS

  • 1 cup basil leaves
  • 3/4 cup olive oil
  • 1/4 cup grated parmesan
  • 1/3 cup pine nuts
  • 1/3 cup peas
  • 1/3 cup frozen peas
  • 1/3 cup frozen corn
  • 1 cup frozen broccoli florets
  • 1 cup frozen artichokes
  • 1 tablespoon salt
  • 1 teaspoon pepper
  • Baguette, sliced
  • 3 sliced scallions

GET COOKIN'

  1. Defrost the frozen vegetables
  2. In a blender, puree the pine nuts, parmesan, 1/2 cup olive oil, and basil leaves.
  3. Toss the vegetable with salt, pepper, and 1/4 cup olive oil. Lay on a sheet pan and broil for 20 minutes, or until slightly browned.
  4. Lay the baguette slices on another baking sheet, brush with oil and season with salt. Toast under the broiler until golden brown. Then brush with pesto and top with veggies
    Garnish with scallions.
