Scallion Mint Couscous

SERVES 10

INGREDIENTS

  • 6 cups of water
  • 1 stick butter
  • 1 tablespoon salt
  • 2 cinnamon sticks
  • 3 10-ounce boxes of plain couscous
  • 1 cup of mint, chopped
  • 1½ cups scallions, sliced

GET COOKIN'

  1. In a small sauce pot, bring water, butter, salt and cinnamon to a boil. Add couscous, stir, cover, remove from heat and let sit for five minutes.
  2. Add mint and scallion and fluff with a fork.
