Scallion Mint Couscous
SERVES 10
INGREDIENTS
- 6 cups of water
- 1 stick butter
- 1 tablespoon salt
- 2 cinnamon sticks
- 3 10-ounce boxes of plain couscous
- 1 cup of mint, chopped
- 1½ cups scallions, sliced
GET COOKIN'
- In a small sauce pot, bring water, butter, salt and cinnamon to a boil. Add couscous, stir, cover, remove from heat and let sit for five minutes.
- Add mint and scallion and fluff with a fork.
