Beets: a misunderstood veggie that seems to split a group into two camps…the lovers and the haters. To me, there are few vegetables sweeter, prettier and tastier than the sliced beet. You cannot go wrong serving them with a soft cheese, such as goat or blue cheese, and a simple vinaigrette. Let’s hear it for Team Beets!
This Beet and Apple Salad recipe is a favorite of mine because it’s a great mix of savory and sweet, and the red hue of the beets is simply beautiful (and perfect for a holiday meal). What’s even better? You can even get your beets right from the can.
Prepare and serve this simple salad at your Christmas dinner and you’ll provide your guests with the opportunity to try out the contentious beet in all its glory. I have full confidence that you’ll draft a few more players onto Team Beet!
