Beet and Apple Salad Recipe
Beets: a misunderstood veggie that seems to split a group into two camps…the lovers and the haters. To me, there are few vegetables sweeter, prettier and tastier than the sliced beet. You cannot go wrong serving them with a soft cheese, such as goat or blue cheese, and a simple vinaigrette. Let’s hear it for Team Beets!
This Beet and Apple Salad recipe is a favorite of mine because it’s a great mix of savory and sweet, and the red hue of the beets is simply beautiful (and perfect for a holiday meal). What’s even better? You can even get your beets right from the can.

Beet & Apple Salad
What you’ll need…
2 tablespoons honey
2 tablespoons apple cider vinegar
2 tablespoons olive oil
2 cans sliced beets
1 Fuji apple
1/4-cup crumbled blue cheese
1-2 teaspoons chopped parsley
Get started…
1. Make dressing: Whisk together honey, vinegar, and olive oil. Season with salt and pepper to taste. Set aside.
2. Rinse and drain beets.
3. Cut apples into slices.
4. Toss beet and apple slices with dressing, coating well. Top with blue cheese and parsley.
