Polenta Sandwiches


  • 1 roll pre-made polenta
  • 1 red onion, chopped
  • 1 tomato, chopped
  • Salt
  • Pepper
  • Creamy Goat Cheese


  1. Slice roll of polenta into thin slices. Trim slices with a small, round cookie cutter.
  2. Dry fry polenta rounds, flipping as needed. Remove from pan.
  3. Flash fry chopped tomato and red onion.
  4. Top polenta rounds with salt, pepper, goat cheese, red onion and tomato.
