Simple Spinach Pizza
In the summer, I’m always looking for recipes that require little stove or oven time. It’s just too hot! Plus, I seem to crave light meals that really utilize the fruits and veggies of the season. While a greasy cheesy pizza can hit the spot, this lighter version is just as delicious and definitely much healthier. Try this Spinach & Artichoke Salad Pizza and you can say you had a salad for lunch!
What you’ll need…
2 prepared pizza crusts
One 5-ounce bag ready-to-use baby spinach, roughly chopped
1/2 cup basil leaves, chopped
1 small red onion, finely chopped
One 10-ounce can marinated artichoke hearts, chopped
1 tablespoon marinated artichoke oil, reserved from the can of artichoke hearts
1 tablespoon olive oil
2 tablespoons red wine vinegar
Salt and pepper
One 8-ounce package herbed cheese spread
Get started…
1. Place pizza crusts on a baking sheet and bake according to package directions. Set aside to cool.
2. In a large bowl, combine spinach, basil, onion, cherry tomatoes, and artichokes. Set aside.
3. To make salad dressing, whisk together marinated artichoke oil, olive oil, and vinegar. Season with salt and pepper to taste. Drizzle over salad and toss to coat.
4. When crusts are completely cool, spread herbed cheese on them, and top with spinach salad. Slice and serve.
