Simple Chopped Salad

Think an all-green salad would be boring? Think again! This delicious and creamy Chopped Green Salad will have you coming back for seconds. The homemade dressing is quick and simple to make with common ingredients in your fridge. Enjoy and savor the flavors of Parmesan, avocado and greens!

What you’ll need…

4 cups chopped romaine
4 cups chopped spinach
2 cups chopped cucumber
2 cups chopped zucchini
2 cups chopped avocado
3/4 cup small capers
Salt and black pepper to taste

1 cup grated Parmesan
Juice of 2 lemons
1 tablespoon black pepper
1 cup mayonnaise
1/4 cup extra-virgin olive oil

Get started…
1.  For the salad: In a large bowl, combine chopped greens, vegetables, and capers.
2.  For the dressing: In a food processor, combine Parmesan, lemon juice, pepper, and mayonnaise. Keep the food processor running and slowly add oil in a steady stream. Reserve dressing in refrigerator until ready for use.
3.  Add Parmesan dressing to salad. Toss well and season to taste with salt and pepper.
