A bit of sunshine

As the days get shorter and a bit darker we say brighten it up with a touch of sunshine, a dash of sugar and a whole lot of passion! It is quick ….it is easy and it is delicious ……ENJOY!



Passionfruit Crème Pots


Makes 16


6 cups melted passionfruit sorbet

24 egg yolks

8 tablespoons sugar

5 cups heavy cream

2 cups whole milk


Preheat oven to 300 degrees F.  In a large sauce pot, bring the passionfruit sorbet to a boil and reduce by half.  Let cool.  In a large bowl, whisk the egg yolks and sugar together.  Add the heavy cream, whole milk and reduced passionfruit sorbet.  Stir to combine.


Place ramekins in a shallow baking dish and fill the baking dish with water.  The water should come halfway up the sides of the ramekins.  Fill each ramekin ¾ full with the passionfruit mixture.  Bake for 35-40 minutes, until the center of the crème pots is set.
