Simple Blueberry Muffins

When it comes to blueberry muffin recipes (among many things!), my mother is #1. Mother Meg’s Blueberry Muffins are a simple classic, sure to please all who taste the sweet, warm bites. And the great thing is, they’re not just for a special homemade breakfast. Growing up, I was lucky enough to have these delectable blueberry muffins in place of a dinner roll!

How wonderful would it be for any mother to receive a basket of gooey and delicious muffins this Mother’s Day? (hint, hint!)

Mother Meg’s Blueberry Muffins

What you’ll need…
1-3/4 cups flour
1 teaspoon salt
1/2 teaspoon baking soda
3 Tablespoons butter
1 cup sugar
1 egg, beaten
1/3 cup milk
1 cup blueberries

Get started…
1.  Cream together sugar, butter and egg.
2.  Combine dry ingredients.
3.  Add the milk and dry ingredients to sugar mixture alternately. Start with about 1/3 of the milk, then half of the dry ingredient mixture, then another third of the milk, then the rest of the dry ingredients. Finally, add the remainder of the milk.
4.  Fold in the blueberries, gently.
5.  Bake at 350 degrees F for about 25 minute, until golden brown.

    I could not get these muffins done. I stuck them back in for 5 minutes several times, probably totaling an additional 20 minutes. Help!
