Kale Pepper and Edamame
When you want to be healthy, but also feel like you want to be indulgent, there is nothing like a beefy salad to wet your whistle. This salad filled with greens and super foods is just the ticket. Chop it all up in precious little bits and toss with a little drizzle of oil and vinegar and enjoy. The best part is you can keep on enjoying because this one is chuck full of all things good!

Ingredients
- 1 bunch Bale of hay chopped finely
- 1 1/2 cup edamame cooked
- 1/3 cup carrots shredded
- 1/3 cup yellow pepper chopped finely
- 1/3 cup red pepper chopped finely
- 1/2 cup chopped parsley
- 1/4 cup olive oil
- 1 Tbl balsamic vinegar

Instructions
- Place all veggies in together in a bowl and toss with oil and vinegar. Add salt and pepper to taste.
