Cold asparagus crudités with garlic dip recipe

Ingredients
- 2 bunches thin asparagus
- 1 cup mayonnaise
- 2 tablespoons olive oil
- 1¼ cup grated Parmesan cheese
- 3 cloves garlic crushed & minced
- Salt & pepper season to taste

Instructions
- Place a large pot of salted water over high heat and bring to a boil. Prepare an ice bath by placing ice and cold water in a large bowl.
- While the water is coming to a boil, trim the lower 2/3 of each asparagus spear. Discard any wilted spears.
- Add the asparagus to boiling water and cook until almost tender, about 2-3 minutes. Transfer the asparagus to the ice bath and let cool completely. When cool, remove from ice bath and drain in a colander. Set aside.
- To make the garlic dip, place the mayonnaise, olive oil, Parmesan cheese and garlic in a food processor and process until smooth. Season to taste with the salt and pepper.

Be sure to select thin asparagus stalks for this easy recipe which can be an hors d'oeuvres or a snack. Can be made in advance.
