Apple Brownies
Ingredients
- 6 eggs
- 3 1/2 cups sugar
- 2 cups vegetable oil
- 2 teaspoon vanilla
- 4 cups all purpose flour
- 2 teaspoon cinnamon
- 2 teaspoon baking powder
- 1 teaspoon salt
- 4 cups diced apples

serves 20 Brownies.
Instructions
- Preheat oven to 350º.
- In a large mixing bowl beat eggs and sugar until fluffy and pale. Add oil and vanilla; mix well. Sift dry ingredients and mix into the wet mixture. Stir in apples.
- Coat pans with non-stick spray and spread batter evenly into a 9X13 (3 quart) pan. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
